Creamy Tomato pasta

Tomato’s, hang on I just use them in salads or used in a puree. But I never thought of making a  pasta simply with tomatoes. Imagine eating bowl  full of hot creamy tomato pasta. The pasta made in tomato sauce is the easiest and yummiest recipe which can be cooked in less than 20-25 minutes. A simple recipe that can be cooked by anyone. This recipe is something that you can make at least few times a month and yet whole family would love it.

Things to Remember

While cooking pasta you should always keep a few things in mind example: You should never use the same spatula for sauce and boiling pasta and try to use extra virgin olive oil. You can season the pasta with some great Italian herbs and not to add a lot of sauce. For every pound of pasta, you can use one tablespoon of salt and remember to choose the right shape pasta for the sauce.

If your pasta gets sticky you can add cooking oil in water. Strain the pasta as soon as it is done. Please do not cook different shapes pasta together.

Add salt when water starts boiling and always use large pot for boiling pasta. Toss the extra pasta with olive oil to prevent it from sticking.

Ingredients

  1. Pasta
  2. Ginger garlic paste
  3. Olive Oil
  4. Tomatoes
  5. Pinch Chilli Flakes/ Black pepper/ Salt, plus more as needed
  6. 1 small onion ( finely chopped)
  7. 1 can crushed tomatoes
  8. ½ cup cream
  9. Some basil leaves
  10. Parmesan/Mozzarella Cheese, for serving

Time to Cook

  1. Put your pasta in salted boiling water. Cook it for the time duration that is mentioned on the pack and strain when cooked.
  2. Add olive oil in a big pan over medium heat until shimmering.
  3. Now add chopped onions and cook it for 3-4 minutes until it is translucent.
  4. Add Ginger garlic paste, Chilli flakes, black pepper and salt as per your taste and sauté it for 30 seconds or 1 minute.
  5. Now carefully add crushed tomatoes and cook the puree for 10 minutes at medium heat.
  6. When puree is cooked, gently add the cream and keep stirring it.
  7. Add pasta and mix it well.
  8. Add some more seasoning (if needed)
  9. Put the pasta in a bowl and garnish it with some basil leaves and parmesan/ mozzarella cheese

If you want to make your pasta more interesting then add some chopped bell peppers/mushroom. It will add more flavors in the pasta. Try to use fresh tomato puree for amazing flavor in the sauce.
