‘Cinnamon Rolls’ one of the best and easiest recipe one can make in very less time. They taste better than cinnamon buns and you should definitely try them often. Homemade cinnamon is healthier than buying anything off the shelf from the supermarket. I have tried this couple of times so thought of sharing with you guys
Things to remember
In these Cinnamon rolls, I did not use conventional sugar but used coconut blossom sugar which keeps you satisfied for a longer time. These rolls are incredibly delicious because they are very soft and fluffy. The dough for the rolls can be prepared at home in very less time. Talking about the filling for the rolls, it just requires some selected ingredients like cinnamon, vegan butter, coconut sugar and coconut syrup. The filling of the cinnamon buns is generally not that sweet so you can use cashews and coconut to make it smoother and taste better. Once your rolls are prepared you can choose the toppings of your choice.
Ingredients
For Yeast dough:
- Active dry yeast
- Soy milk
- 1/3 cup coconut sugar
- Coconut oil
- 4 cups flour
- Cinnamon
- Cardamom
- 1 tsp salt
For Cinnamon filling:
- Coconut sugar
- Coconut syrup
- Cinnamon
- Vegan butter
- 60g walnuts
- 50g raisins
For coconut frosting:
- Soaked cashews
- Coconut syrup
- Coconut oil
- Powdered sugar
- Plant-based milk
- Melted Vegan butter for brushing
Steps to cook:
Vegan yeast dough:
- Crumble the yeast and dissolve it with 1 tbsp of sugar in lukewarm water.
- Melt the coconut oil and add it to the mixture of milk. Add sugar, cardamom, salt in the mixture. Add some flour to it and knead the dough on a flat surface for 4-5 minutes until it gets smooth. You can also use food processor. After the dough gets smooth put it in a large bowl and cover it wait a damp piece of cloth for about 40 minutes.
Cinnamon filling:
- First of all melt the vegan butter in a small pan. Add coconut syrup, coconut sugar and cinnamon to it and stir well. Add chopped nuts and raisins.
- Check on the dough and if it is ready it can be rolled on a flat surface to a large rectangle about 1 cm thick.
- Spread the filling evenly over the dough.
- Roll up the dough from the longer side. Cut it into sliced pieces evenly. Place the pieces over the greased paper leaving enough space between each piece so that they do not stick while rising. Relax for 40-45 minutes.
- Preheat the oven to 180 degree C top and bottom heat.
- Bake them for 20 minutes after brushing the pieces with vegan melted butter.
Cashew coconut frosting:
- For making creamy sauce, mix all the ingredients together in a blender and blend them until they get smooth. Add tbsp of plant-based milk to make it thin.
- Let the roll to cool down for sometime after baking and pour over the frosting.
- Enjoy them while they are warm.
