Quiche is a type of pie or a tart which is similar to a frittata. It is loaded with lots of colorful vegetables, cream, and cheese. Mostly, it is made with eggs but I am sharing with you the vegan/vegetarian version of this recipe which is made with pure plant and non-dairy products.

Things to remember

There are couple of things to be kept in mind while preparing this dish. The most important thing is the crust of the quiche which should be crispy and that is based on its dough. The dough should be kneaded properly. The salt and the flour should be mixed properly until it starts leaving the surface. While to make it softer add vegan butter. Roll it out in disk form, cover it with plastic and keep it in the fridge for 30 minutes.

Moreover, the pie can be stuffed with any of the vegetables of your personal choice but they should be dry. There should be no water or moisture in it otherwise the pie crust will get soft and soggy.

Ingredients

  • Flour-1 cup
  • Salt –to taste
  • Butter- 1tbsp(optional)
  • Toppings
  • Spinach- 1cup(boiled)
  • Cream-2 tbsp
  • Mushroom-5-6 nos
  • Olive oil-2 tbsp
  • Onion-1
  • Other vegetables (personal preference)

Steps to follow:

1.      Take 1 cup of flour, add a pinch of salt and 1 tbsp spoon of butter(optional) and knead it till it starts leaving the surface.

2.      Roll it in the form of a disk, wrap it in plastic and keep it in the fridge for 30 minutes.

3.      In the meanwhile, cut the vegetables you wish to add to your quiche.

4.      Take the spinach, cut and blend it in the grinder and then sauté it in a pan till it gets dry.

5.      Sauté all other vegetables ( if used raw there will be moisture in them that can result in wet topping making the pie wet and soggy). Add a pinch of salt to it.

6.      After this, take out the dough and roll it over a surface, about 4mm thick.

7.      Transfer the dough into the greased pie-dish of whatever shape you like and remove the extra dough.

8.      Prick the dough so that it does not rise when baked in an oven.

9.      Add the spinach and garnish it with mushrooms, onions and other vegetables of your choice.

10.  Bake it for 30 minutes to1 hour till it is hot and crispy.

11.  Transfer it into the plate and it’s ready to serve.

Enjoy!
