Ingredients
For 2:
- 30 gr. rice
- A handful of spinach
- 1 carrot
- half onion
- 1 clove of garlic
- 1 lemon
- Salt and Pepper To Taste
- 2 tablespoons of extra virgin olive oil
- 3-4 tablespoons of vegan cream
- a bunch of chives
- about 800 ml of vegetable broth
Preparation:
Heat the oil and brown the onion and garlic, add the rice and brown them together. Then add the spinach and grated carrot. Salt, pepper and cover with vegetable broth. Let it cook for 15 minutes. At the end also add the vegetable cream, let it cook until it thickens a bit.
Serve with lemon juice and chopped chives..
