Baked Mixed Radish Salad

Ingredients

For 2:

  • 1 daikon
  • a handful of red radishes
  • Salt and Pepper To Taste
  • extra virgin olive oil to taste
  • a handful of rocket
  • 1 teaspoon of garlic powder
  • Raspberry vinegar to taste

 Cooking Method

Wash and cut the radishes and daicon into slices, add salt and pepper, add oil and garlic powder and mix. Place them on a baking sheet with parchment paper underneath, and bake in a preheated oven at 352F for 20 minutes or until you see they are ready.

Once cooked, place them on a serving dish with rocket, add a little more oil and raspberry vinegar.
