Baked Winter Vegetables

For 2:

  • 300 gr. pumpkin
  • 1 cup of pre-cooked chickpeas
  • 1 fennel
  • Salt and Pepper To Taste
  • 4 carrots
  • A handful of pearl onions
  • 2 bay leaves
  • 2-3 tablespoons of extra virgin olive oil
  • 1 tablespoon of tomato puree
  • 1 cup of vegetable broth

 Cooking Method

Cut the vegetables into small pieces and put them in a pan where you will add salt, pepper, extra virgin olive oil and tomato sauce. Stir, also add the broth and bay leaves and bake at 352F for 30 minutes or until you see that the vegetables are well cooked.
