Lentil And Cabbage Salad


For 2:

  • 1 cup of pre-cooked lentils
  • a handful of finely chopped cabbage
  • 1 can of pre-cooked edamame
  • Salt and Pepper To Taste
  • 1 lemon
  • Parsley to taste
  • 2-3 tablespoons of pomegranate seeds

 Cooking Method

Put all the ingredients in a salad bowl, add salt and pepper. Then marinate with extra virgin olive oil and lemon juice. Also add the chopped parsley and pomegranate seeds.

Stir and leave to marinate in the fridge for 20 minutes before consuming.
