Sandwich With Eggplant Cutlet

  • 1 large eggplant
  • 1 cup of vegan cream
  • Salt and black pepper to taste
  • Seed oil for frying
  • A bunch of parsley
  • 1 teaspoon of curry
  • 1 teaspoon of garlic powder


  • Breadcrumbs
  • Bread for sandwich
  • A handful of rocket
  • 2-3 tablespoons of vegan mayonnaise Bread for sandwich

Cooking Method

  • Cut the aubergines into slices and add salt and pepper.
  • Put the flour in 3 different bowls, the breadcrumbs in another and the last vegan cream, where you also add salt, pepper, curry, garlic powder, and chopped parsley. Mix.
  • Put the oil to heat. then pass the aubergine slices in the flour, then in the cream and last in the grated bread.
  • Fry well on both sides. Do the same for the rest of the aubergines.
  • In the meantime, heat the sliced bread, spread it with vegan mayonnaise, put on top of fried eggplant slices, a little rocket, close with another slice of bread and serve.
