Vegan Salad Plate With Avocado & Gherkins

Ingredients

For 2

  • 1 package of mixed salad
  • 1 avocado
  • A handful of beetroot
  • 1 package of pre-cooked edamame about 50 gr.
  • A handful of pickled gherkins
  • A handful of pomegranate seeds
  • 1 lime
  • 2-3 tablespoons of extra virgin olive oil
  • Salt and black pepper to taste

Cooking Method :

  • Make an emulsion of lime juice, oil, salt and pepper, mix well.
  • Put the salad on a serving plate, add the turnips cut into thin slices, the avocado, gherkins, pomegranate seeds, edamame. Sprinkle with the marinade made with oil and lime juice. Serve with some crackers
