Vegan Salad Plate With Avocado & Gherkins

- 1 package of mixed salad
- 1 avocado
- A handful of beetroot
- 1 package of pre-cooked edamame about 50 gr.
- A handful of pickled gherkins
- A handful of pomegranate seeds
- 1 lime
- 2-3 tablespoons of extra virgin olive oil
- Salt and black pepper to taste
Cooking Method :
- Make an emulsion of lime juice, oil, salt and pepper, mix well.
- Put the salad on a serving plate, add the turnips cut into thin slices, the avocado, gherkins, pomegranate seeds, edamame. Sprinkle with the marinade made with oil and lime juice. Serve with some crackers
