- 300 grams of butternut squash
- 300 gr of brussels sprouts
- 1 onion
- 2 cloves of garlic
- extra virgin olive oil
- a handful of cranberries
- a handful of mixed nuts
- Salt and black pepper to taste
- parsley to taste.
Cut the pumpkin and onion into slices, and put them in a baking dish. Also add the sprouts cut in half and sliced garlic. Sprinkle it with salt, pepper, oil, maple syrup and mix well. Bake in a preheated oven at 352F degrees for 20 minutes, the last few minutes also add the cranberries and dried fruit and leave again in the oven until you see that the vegetables are cooked.
Serve with chopped parsley.
